Mia's Creamy Chicken Zucchini Skillet

When Mia posted this recipe back in May, I immediately pinned it, and knew it was going to be a popular dish at my house. And of course it was delish!
Ingredients

Grilled chicken, diced
2 zucchini squash (I used one green and one yellow)
1/2 vidalia onion, minced
2-3 cloves of garlic, minced
1 container of organic grape tomatoes, halved
2-3 wedges of Laughing Cow Creamy Swiss Light cheese
Directions

Add coconut oil to your pan or skillet and heat over medium heat.
Add chicken, garlic, onion, and zucchini squash
Once squash is soft, add cheese wedges and tomatoes
Serve and enjoy!

  17. this looks so good, ever since I saw Mia's recipe I've been wanting to try it, but I keep forgetting to buy the cheese. My husband isn't a huge fan of super cheesy dishes, is it like lasagne/mac and cheese type cheesy, or is it kinda light?
