Oatmeal Cookies that aren't a tease

A couple years ago my mom and a bunch of her friends created a cookbook full of their favorite recipes. I have found some amazing dinners and desserts in there and still refer to it when I'm looking to make oatmeal raisin chocolate chip cookies. And what makes these cookies so good, is that it's actually an oatmeal raisin recipe but I trade out the raisins for chocolate chips so you still get the oatmeal goodness and hint of cinnamon. Yum!

Oatmeal Raisin Chocolate Chip Cookies


Preheat oven to 375 degrees

In a large bowl, cream 1 cup of butter and 2 cups of light brown sugar

Add 2 eggs and 2 tsp. of vanilla



Combine all dry ingredients in a medium bowl and slowly stir into the large bowl

Dry ingredients:

2 cups of flour

3 cups of quick oats

1 and 1/2 tsp. of baking soda

1 tsp. of salt

1 tsp. of cinnamon



Then stir in 1 cup of chocolate chips :)

Drop by tablespoonfuls onto ungreased cookie sheet and bake for 8 minutes.

Cool for 1 minute and move to wire rack to cool completely and enjoy!



My cookies always come out of the oven all puffy and pretty and once I move them to the cooling rack, they flatten out. They still taste great, they just don't look as pretty. Does anyone else have this problem? Does anyone know how to avoid the flattening?
