3 day weekends are my favorite :)

So glad that both H and I get today off from work, and we'll be spending the day getting ready for our neighborhood game night tonight. If you follow me on Pinterest you may have noticed that I've been pinning a lot of great game night ideas.

Such great ideas, however I've been super busy lately so other than planning my menu of snacks and drinks for tonight, I sadly don't have a lot of decor inspired from above. There's always next time!

I plan on serving a double batch of buffalo dip (apparently a single batch isn't enough lol), dill pickle dip with cubed bread for dipping, sugar cookies in my bunny and butterfly shapes, and a pitcher of blue margaritas.

Buffalo Chicken Pasta Yumminess

It's been a while since I've tried a new Pinterest recipe, but we've been on a buffalo kick lately at the green fashionista household. Buffalo pretzels, light buffalo ranch on salads, buffalo chicken sandwiches, you name it we gobble it up!

So, when I came across this recipe for buffalo chicken pasta I knew we needed to try it out.

My finished product and it was delish!


1 16 oz. box of penne pasta cooked and drained

3 boneless skinless chicken breasts cubed and cooked

1/2-1 cup of Franks Red Hot (I use the Buffalo style)

3/4-1 cup of ranch dressing (I use light ranch)

1-2 cups of shredded cheddar cheese (I use reduced fat cheddar cheese)

Preheat oven to 350 degrees

Mix together red hot and ranch dressing

In a separate bowl, mix together chicken, pasta, and cheddar cheese and then pour sauce mix over it and mix until combined.

Pour everything into a baking dish and sprinkle more cheddar cheese on top and bake for 20-25 minutes

Super easy and delicious for all of you buffalo lovers out there! It's enough to serve a small family of 3-4, but since it's just the 2 of us we had enough for dinner, seconds, and leftovers to take to work for lunch :)

Travel Tuesday ~ Cancun

My first big trip with H was to Cancun back in January 2009. To this day, it's still one of our favorite trips we've ever taken. We loved the GORGEOUS water, playing in the waves, and the endless guacamole and margaritas. Everyone say TEQUILAAA! :-D


We stayed at the GR Solaris which is one of the newer/nicer resorts in the Hotel Zone and we had full access to their sister resort the Royal Solaris which was a short walk down the beach. We also booked 2 excursions which were completely different from each other yet so much fun and I highly recommend them both to anyone planning a trip there.



We went on a sunset dinner cruise on our 2nd night there. The only downfall to this, was we had to leave the pool/beach area around 2:00 to go shower and get ready to be picked up around 3:00 (I would assume in the summer the pickup time would be much later as the sun sets later that time of year) but once we got there, there was a bar on the beach serving unlimited margaritas, so we sat down on one of the bar swings and enjoyed complimentary drinks until we set sail. 






Drinks were also unlimited on board as we cruised around the area and watched the beautiful sunset.



Afterwards, they brought us back to shore where we enjoyed dinner on the beach which was either steak or lobster. Since we're both allergic to seafood, we went with the turf instead of the surf :-P



After dinner, they served dessert and there was dancing under the stars until it was time to go back to our resort. Such a great evening :)

The other excursion we booked was an ATV and Jet Skiing excursion which was a lot of fun. We went to a ranch where they make their own tequila which was hands down the best tequila I've ever tried (still kicking myself for not buying a bottle! Every time we're in Mexico I look for it and ask about it and have had zero luck).

The rest of the trip was spent lazing by the pool and playing in the waves, we also went to town and enjoyed drinks at Margaritaville, Pat O'Briens (nothing like the one in New Orleans), and Senor Frogs.

Actually for the 1st time in a while my weekend was not filled with shenanigans and it was beautiful. Life has been so crazy lately that it was soooo nice to have a low key weekend.

1. What is your favorite thing about spring?

~ When I still lived in CT my favorite things about spring were finally getting back to outdoor living, the leaves coming back on all the trees, and all the fresh flowers in bloom especially all the daffodils and lilac bushes.

Now that I live in FL, I love that the beach weather is back and all the beautiful magnolia trees in bloom.



I also love that it's warming up but still isn't oppressively hot out


2. What is your favorite kind of flower to grow or receive?

~ Peonies... if only I could go back and change up my wedding flowers 






3. What is your favorite nail polish color?

~ Essie Avenue Maintain




4. What is your favorite outdoor activity?

~ Anything to do with water... the beach, pool parties, boating, jet skiing, snorkeling, river tubing, parasailing, you name it I've done it and I can't get enough! My mom said ever since she took me to my first water babies class she knew I'd always love the water. 




5. Do you have any fun spring plans?

~ We have my cousin's wedding back up in CT, so we'll be flying in a few days early since we'd like to head into the city as well.



~ We also have our trip to Punta Cana for H's 30th b-day.. can NOT wait!!

Cheers to the Weekend

Cheers to the weekend and a short work week next week!



Looking forward to a quiet weekend for the first time in a while. Life has been so crazy lately (good and bad) so it's nice to be falling back into a routine and laying low this weekend.

Tonight, I'm going to a pampered chef party at my neighbor's. I'm beyond over all those sales pitch parties, but I can't wait to see my neighborhood girls tonight. It'll be a nice night filled with girl talk, drinks, and of course me buying something I probably don't need :-P

Other than that I'm looking forward to some much needed relaxation and H and doggy time. What more does a girl need?

On another note.. I haven't posted any OOTD's recently as I have felt uninspired haven't had as much time. Looking back on this first week of spring, I can't believe how "chilly" it still is. Usually by this time it's pretty hot around here, but the temperature has been playing hot and cold.. literally! Grrrrr to the brrrrrr!

Spring & Summer Bucket List

I know I don't live amongst snow and freezing to the bone temps anymore (and I couldn't be happier!) but it does get somewhat chilly here. Contrary to popular belief, even though we live in the sunshine state, I have to stow away my sundresses and bathing suits for a few months. We still have some warm days here and there, but nothing like the spring and summer. So, I'm a very happy girl that it's officially spring and am already planning out the next several months.
