We stayed at the GR Solaris which is one of the newer/nicer resorts in the Hotel Zone and we had full access to their sister resort the Royal Solaris which was a short walk down the beach. We also booked 2 excursions which were completely different from each other yet so much fun and I highly recommend them both to anyone planning a trip there.
We went on a sunset dinner cruise on our 2nd night there. The only downfall to this, was we had to leave the pool/beach area around 2:00 to go shower and get ready to be picked up around 3:00 (I would assume in the summer the pickup time would be much later as the sun sets later that time of year) but once we got there, there was a bar on the beach serving unlimited margaritas, so we sat down on one of the bar swings and enjoyed complimentary drinks until we set sail.
Drinks were also unlimited on board as we cruised around the area and watched the beautiful sunset.
Afterwards, they brought us back to shore where we enjoyed dinner on the beach which was either steak or lobster. Since we're both allergic to seafood, we went with the turf instead of the surf :-P
After dinner, they served dessert and there was dancing under the stars until it was time to go back to our resort. Such a great evening :)
The other excursion we booked was an ATV and Jet Skiing excursion which was a lot of fun. We went to a ranch where they make their own tequila which was hands down the best tequila I've ever tried (still kicking myself for not buying a bottle! Every time we're in Mexico I look for it and ask about it and have had zero luck).

The rest of the trip was spent lazing by the pool and playing in the waves, we also went to town and enjoyed drinks at Margaritaville, Pat O'Briens (nothing like the one in New Orleans), and Senor Frogs.

ohhh this makes me want warm weather, a beach and a margarita so bad right now!!! so jealous of the sunset dinner cruise. this all sounds perfect!
