Summer Pasta + Kendra Scott Giveaway

I'm officially back from my whirlwind Connecticut-NYC-Boston trip, and I'm exhausted! So much to share with you all, and I'm still so excited that I got to meet the fabulous Biana while I was in Boston. I'll be back tomorrow with a very picture heavy recap post! But for now, it's time to share my new favorite summer recipe that I found in the back of an InStyle magazine while flying back from CT. I'm simply naming it "Summer Pasta" since it's a great dish for this season.
Ingredients

Organic spaghetti noodles
Olive oil
4 cloves of garlic, diced
1 package of organic grape tomatoes, halved
1/3 cup of parsley, chopped
1/3 cup of basil
1/4 cup of fresh parmesan cheese
2 tbsp. of lemon juice
Optional - diced grilled chicken for protein
Directions

In a large pot, cook the pasta until al dente.
Drain well, and reserve about 1 cup of water to use later.
In a sauce pan, heat olive oil over medium head and add garlic.
Heat until softened (do not brown).
Add pasta to garlic oil, toss to coat over moderately low heat.
Add cherry tomatoes, parsley, basil, parmesan cheese, and pepper.
Toss quickly to combine and heat through for about 30 seconds.
If pasta looks dry, use some of the reserved pasta water.
Remove from heat, and add lemon juice.
Toss well, and add any desired additional seasoning.

  1. Looks tasty, light and super easy to throw together! I've made a similar pasta with feta, tomatoes, lemon and a greek seasoning. So yummy too! Love a light pasta during the summer!

  6. Oh my that looks delicious!!! I will have to try it out on a weekend. I just bought ginger from Target in that same brand of seasoning. So convenient when you don't want to end up with a crap ton of basil or ginger when you only needed a little for one recipe for the week. Cilantro...I am looking at you too! They give you SO MUCH in one little bundle that I can never use.
