Ingredients
1 lb. of extra lean ground turkey
1/4 onion, diced
2 cans of diced green chiles
1 and 1/2 cups of reduced fat cheddar cheese
2 eggs
3/4 cup of skim milk
1/8 cup of flour
1 tsp. of cumin
1/2 tsp. of pepper
Directions
Preheat oven to 375 degrees
Cook ground turkey and onion until the meat is fully cooked
Spray casserole dish with non-stick spray
Line the bottom of the dish with chiles
Layer the cooked meat and onion on top of the chiles, and top with cheese
In a medium bowl, whisk together milk and eggs, then add the flour, cumin, and pepper and mix well.
Pour milk mixture over the casserole, and bake for 35-40 minutes at 375 degrees

ReplyDeleteMmmm chiles!!! This dish looks fairly simple and fairly healthy too :) When I am out at fast casual Mexican places (Moe's, Salsaritas, etc) I always like to grab a little container of the green chile salsa to mix it up!
