Ingredients
1 cup of pure pumpkin
1/2 cup of vegetable oil
1 cup of sugar
1 large egg
1 tsp. of vanilla
1 tsp. of baking soda
2 tsp. of baking powder
2 tsp. of cinnamon
1 tsp. of skim milk
1/2 tsp. of salt
2 cups of flour
2 cups of semi-sweet chocolate chips
Directions
Preheat oven to 350 degrees
Combine oil, pumpkin, sugar, egg, and vanilla.
In a separate bowl combine baking soda, and milk, then add to pumpkin mixture.
In another bowl combine cinnamon, baking powder, salt, and flour, then add to pumpkin mixture.
Stir in chocolate chips and scoop out onto nonstick cookie sheet.
Bake at 350 degrees for 12-13 minutes.

ReplyDeleteI do not like pumpkin pie either but I really like all other pumpkin recipes if subtle, especially cookies!! I love that these have chocolate chips in them, deck stele pinning!! ReplyDeleteLove these! I used to make them yearly but fell out of the habit--maybe I need to bring them back this year! I use white chocolate which is a fun variation, too :)

ReplyDeleteAdding the cinnamon sounds liked the perfect way to make these cookies amazing! And that's great that they aren't too pumpkin-y because I think that there are a lot of people who don't want to be overwhelmed by pumpkin.
