Ingredients
1 cup of pure pumpkin
1/2 cup of vegetable oil
1 cup of sugar
1 large egg
1 tsp. of vanilla
1 tsp. of baking soda
2 tsp. of baking powder
2 tsp. of cinnamon
1 tsp. of skim milk
1/2 tsp. of salt
2 cups of flour
2 cups of semi-sweet chocolate chips
Directions
Preheat oven to 350 degrees
Combine oil, pumpkin, sugar, egg, and vanilla.
In a separate bowl combine baking soda, and milk, then add to pumpkin mixture.
In another bowl combine cinnamon, baking powder, salt, and flour, then add to pumpkin mixture.
Stir in chocolate chips and scoop out onto nonstick cookie sheet.
Bake at 350 degrees for 12-13 minutes.

ReplyDeleteI don't know why I've never thought to make pumpkin cookies... I make pumpkin everything else! Love the addition of chocolate chips, they'd be so good with some butterscotch thrown in there, too!

I need to make some pumpkin chocolate chip muffins, maybe this weekend.
