Ingredients
1 box of rotini pasta, cooked
1/4 cup of light mayo
1 and 1/2 tsp. of chili powder
1/2 tsp. of salt
1 can of corn, drained
1 can of black beans, drained
1 lime
1 pint of cherry tomatoes
Directions
Boil pasta for 9-10 minutes, drain and allow to cool
In a bowl, combine the mayo, the juice of a fresh lime, chili powder, and salt.
Add the cooked pasta and the rest of the ingredients and mix well until combined.
Cover and refrigerate for an hour.
Refrigerate any leftovers *makes a great lunch the next day*.
