Pistachio Cake

One of my favorite sweet recipes is for pistachio cake. When my mom was a little girl, every year her mother asked her what kind of cake she wanted for her birthday and she always said "pistachio cake" since she loved the pudding. However, back then there weren't really any recipes for it so my nana did her best to come up with a recipe and when she finally served it one year, my mom was underwhelmed and never asked for it again.


So, when I stumbled upon a recipe for pistachio cake I was intrigued to try it after hearing the stories over the years from my mom. I didn't go into it with high expectations, but it tasted fabulous!



Cake: In a mixing bowl, combine 1 box of yellow or white cake mix, 2 packages of pistachio pudding mix, 1 cup of water, 3/4 cup of vegetable oil, and 4 eggs. Then add to a greased and floured bundt or cake pan and bake at 350 degrees for 40-50 minutes. Super easy and super yummy!

*Neither H or I like nuts, so I sifted out the nuts in the pistachio pudding mix before adding the pudding mix to the batter. *

Frosting: 1 cup of powdered sugar, 1 tbsp. of melted butter, and 2 tbsp. of milk and drizzle on top of the cake.

*When I make cupcakes instead of a full cake, I use vanilla or cream cheese frosting and frost each cupcake*.

  4. I don't think I've actually EVER had anything pistachio flavored! I usually make my "cakes" into cupcakes, too! Just easier to eat :)
