What's on the menu?

I've noticed lately I've been in a food rut and have been cooking a lot of the same dinners over and over again. One of my staples is my homemade meat sauce that I make every week since it's H's favorite and it gives us two dinners and a lunch for him to take into work. I also tend to make Shepards Pie, Baked Mac n' Cheese, Cajun Chicken Pasta, and Hamburger Helper A LOT! So, I decided this week to mix it up a little and break the monotony. 




So, I took out my recipe book and went on to Pinterest and started making a grocery list. If you have been living under a rock and still haven't discovered Pinterest you are missing out for sure! So get on over there and see what all the fuss is about! I'm just super upset that site wasn't around when I was planning my wedding 2 years ago. 

The first thing I took from Pinterest was a dip recipe that I decided to make for last night. Friends of ours (who are getting married next weekend whoo hoo!) had some people over last night for Game 7 of the Celtics and the Heat and then the boxing fight afterwards. I made the Skinny Poolside dip and it was amazingness!


Skinny Pool-side Dip

~ 2 packages of fat free cream cheese (softened)
~ 1 can of corn
~ 1 red pepper, chopped
~ 2 jalapenos, chopped and unseeded
~ 1 packet of Hidden Valley Ranch dip seasoning 

Mix it all together and serve with crackers

It was de-li-cious! And I didn't feel guilty at all about going to town on it since all it is, is fat free cream cheese and veggies. 

I also tried Michelob Ultra's new Light Cider for the first time and they are also delicious but not as guilt free as the dip, just less guilty than a regular hard cider. They're very sweet, so it's hard to drink more than 2 at a time, but they are definitely yummy!



Now.. getting back to the title of this post and my menu for the week that I wanted to get more creative with. 

Saturday: Buffalo chicken wraps with grilled chicken, Franks Red Hot, lettuce, tomato, and light ranch dressing. I wanted to add crumbled bleu cheese, but H turned his nose up at it :-P

Sunday: I made my weekly pot of sauce and garlic bread as it's H's favorite and it will be the gift that keeps on giving later in the week. My sauce recipe can be found here. 

Monday: BLT's and pasta salad. I picked up low sodium bacon, lettuce, tomato, avocado, and light chipotle mayo. 

Tuesday: Cheeseburgers on the grill and corn on the cob

Wednesday: Leftover sauce and garlic bread

Thursday: Egg sandwiches

I'm hungry just thinking about all this! :)

  2. It's so hard to get out of food ruts! I end up purchasing the same produce every week, except for things that are especially in season, and making similar dishes so I've been actively trying to get out of my food rut as well. French onion soup is always a good idea!

  4. Love your menu, I go to pinterest for ideas for sure but I often feel in a rut. Your bully is so cute! My best friend has one and they are awesome pups. :)
