Chile Rellenos Casserole

One of my favorite ingredients to add to a home cooked meal is diced chiles as I love the extra flavor they add to savory dishes. I found this recipe on Pinterest *of course* and knew it was something I couldn't wait to recreate.

Ingredients

1 lb. of extra lean ground turkey
1/4 onion, diced
2 cans of diced green chiles
1 and 1/2 cups of reduced fat cheddar cheese
2 eggs
3/4 cup of skim milk
1/8 cup of flour
1 tsp. of cumin
1/2 tsp. of pepper

Directions

Preheat oven to 375 degrees
Cook ground turkey and onion until the meat is fully cooked
Spray casserole dish with non-stick spray
Line the bottom of the dish with chiles
Layer the cooked meat and onion on top of the chiles, and top with cheese
In a medium bowl, whisk together milk and eggs, then add the flour, cumin, and pepper and mix well.
Pour milk mixture over the casserole, and bake for 35-40 minutes at 375 degrees

Last Weekending of June

Last Weekending of June

I can't believe this was the last weekend in June! How is time flying by so fast? Since this is my favorite time of year, I'd love for it to slow down just a bit please and thank you. Everyone's all excited about summer right now, but I give it just a few weeks before everyone starts talking about fall. Please no! Enjoy what you have while you have it.
Friday, Coca Cola was outside my job where you could get 2 personalized soda cans. Since I can never find my name spelled out correctly, it was fun to see it printed out on a coke can.
Saturday was all about pool time after a great bike ride. I started off at home, and then moved over to a friend's pool for the rest of the day. Oh and of course new bathing suit pieces from Target. Because they win all the prizes this year!
Sunday was the perfect Sunday-Funday celebrating Pamela's birthday on a cycling pub crawl - so.much.fun!

Stem Cell Vibrant Day Moisturizer
- I apply this moisturizer in the morning before my daily makeup routine. It not only moisturizes, but it also smooths out my skin and provides a great base to apply my usual makeup for the day. My face feels softer and it looks more refreshed than any other moisturizer I've used in the past.
Stem Cell Energizing Mask
- This mask is infused with Vitamins A, C, and E and it really gives your skin that extra oomph and glow that we all are looking for. I love the way my skin feels after applying this mask, perfect after a long day/night.
Stem Cell Dark Circle Eye Cream
- This one has by far been my favorite out of the line as I suffer from hereditary dark circles under my eyes no matter how well rested I am (thanks mom!). I apply a little around each eye every night, and each morning I can tell that the area around my eye is a little brighter.

- Now that I'm in my 30's those pesky wrinkles are starting to show up, and this is the first product that promises to help minimize the appearance of wrinkles that creep up on the delicate skin around your eyes that actually works. Stem Cell Night Rejuvenation Serum
- I love applying this product at night, as my skin looks and feels more refreshed each morning. Even if I had a rough night's sleep you can no longer tell by my skin.

1. The summertime - I love everything about it. The warmth, swimming, beach and boat days, sundresses, grilling and eating outdoors, going out for ice cream, longer days, my list could go on and on...
2. My boys in pinstripes aka The New York Yankees. Don't hate! It's "in my blood" - my grandfathers, aunts, uncles, cousins, my dad, and my brother are all Yankees fans. It's what we do! And growing up an hour outside the city with easy access to the stadium was priceless.
3. A good sale - I never pay full price for anything!
4. The Olympics
5. Travel - trying to see as much of this big beautiful world as possible. I get way too excited when traveling to a new place.
6. Bulldogs - Roxy is the best duggy, and I'd love to have another English Bulldog and a Frenchie too.
7. Harry Potter - the books, the movies, The Wizarding World of HP at Universal.. love it all. I'm a full-blown Potterhead.
8. Luke Bryan - kick that dust up boy and shake it!
9. Guacamole - I could lop that good stuff onto just about anything. Ooooh and cake.... always cake!

1. The words "squat" or "smear" they both give me the heebie-jeevies.

3. Gossipers - some people thrive on gossip and drama. Ain't nobody got time for that!

5. The cold - I hate it so much I moved away from it permanently. No more scraping car windshields, slipping on ice, shoveling snow, or sky high heating bills. It's for the birds!
6. Vomit - I have a ridiculous fear of it happening to me or those around me.

I had my heart set on this romper after seeing Shanna rock it so fabulously, but was disappointed to see how easily the fabric wrinkles in person while I was at the store. Shanna's looked flawless, but I know mine would be a wrinkled mess so I moved on once I saw these shorts in the same print.

And can we talk about these shoes? One of the girls at work who's a fellow Express-lover was wearing these recently and she gushed about how comfortable they were and that they were from our other happy place - Target. Not only were they super cute, but the fact that she said they were also comfortable completely sold me. I told her they would be coming home with me at my next Target visit which they did.

Relaxing Weekending

Relaxing Weekending

This past weekend was recharging for me as I mostly relaxed, and spent a lot of time floating around the pool white trying to finish up The Girl on the Train.
Friday, I tried out the new mobile ordering on the Starbucks app and it was the best thing that ever happened to my weekday morning. There is a Starbucks in the parking lot at my job (yes - it's dangerous!), and a lot of us walk over there on a regular basis to pick up our morning pick-me-ups. But there's always a long line, so I was super excited to hear about the new mobile ordering. You place your order on your phone, and it'll tell you when it'll be ready. Mine said 4-6 minutes, so I placed the order, walked over, and when I walked in my order was already waiting on the counter for me. Perfection! Starbucks you win all the prizes this week!

After work, I made my way in the pouring rain (and horrendous traffic) to happy hour which included rounds of shots and fried food. But of course good times were had... because shots and fried food... and after the rain came this beautiful sunset. Always worth it.
Saturday was a rough day for me as it was the 2nd anniversary of my cousin's passing. I started off the day with coffee and a donut with all the sprinkles before doing some retail therapy and spending the rest of the day poolside. 
That evening, Pamela invited me over for some card games and drinks which got me out of the house and smiling again as CAH is always great for laughs.
Sunday was spent in the pool again after a great Barre3 online workout. My dad is still up in Connecticut, so he opened his card and gift from me over the phone as he and my mom spent a beautiful day down by the beach. I also came across this little guy who was making his way down the street in the mid-day heat. I hope he made it back to the pond!
I've also been on a roll lately with giveaways, I won not one but two giveaways recently and couldn't be more excited for my new goodies! I won a Starbucks gift card from Kate and a very handy Wine2Go from Jaclyn which will come in extra handy on my trip to Key West in 2 weeks with Pamela and Kerri. We can transport bottles of wine, champs, or Skinny Girl in a beach/pool/boat safe container. Now that's just awesome!
